Sourced from the renowned Monte Sion Estate in western El Salvador, this exceptional honey-processed green coffee comes from a third-generation family farm with a coffee heritage dating back to 1907. The Monte Sion family is dedicated to producing high-quality specialty coffee while protecting biodiversity and supporting sustainable farming practices.

Grown at high elevations of 1,250–1,400 metres above sea level, these Bourbon variety beans benefit from rich volcanic soil, cool mountain temperatures and shaded canopy farming, which slows cherry maturation and develops deeper sweetness and complexity in the cup. The farm is located within the Mesoamerican Biological Corridor, a protected ecological zone that supports migratory birds and promotes long-term environmental balance.

The honey process leaves part of the fruit mucilage on the bean during drying, enhancing sweetness and body while preserving clarity. This method results in a beautifully rounded flavour profile that roasts well across light to medium profiles, making it ideal for home roasters, micro-roasters and café production.
